mods help if anything to have a machine that spawns nuka imo you can make it but it needs stuff. Once you unlock the recipe book there's a mod that adds craftable nuka colas like orange grape dark etc. you can craft vim with contraptions workshop dlc machines you can nuka cola too but not all of them. So again you need to mod it.

There are three models of the Nuka machine in-game, the "both" option in the download sections replaces one of those three with the white one. So you should still see the red a bit more. Not every single machine in the game will be replaced, some are precombined, but most of them should be, adding some great variety.
As a proof that the swaps work with mod-added Nuka bottles I uploaded a screenshot of a trashcan full of Nuka bottles from the rather nice quest mod The Machine and Her as the mod swapped thos out just fine.
